味琳 mirin


在研究做日本料理的时候,常常会看到‘味琳’这玩意儿。我也不晓得到底它是什么东东,所以就上网查了一下。


味琳是什么?What is mirin?
原来味琳是料理酒(14%酒精成分)。注意有分‘本味琳’和‘味琳风调味料’,一个是‘正版’,一个是较便宜的‘仿版’(酒精只有1%)。
Mirin is a type of Japanese cooking wine which contains about 14% alcohol. Hon mirin (as the name itself suggests) is the REAL thing while mirin-fu chomiryo is the 'imitation' made to taste like the real thing and costs cheaper.

用来做什么?What is it used for?
味琳可以增添甜味与香味,可遮盖海鲜的腥味,一般用于焖煮及照烧料理。
It adds a mild sweetness and nice aroma to many Japanese dishes. Especially, it helps mask the smell of fish and seafood. It's mainly used for cooking nimono (simmering dishes) and teriyaki dishes.
